The jury of the 2019 edition of ‘50 Top Pizza Europe‘ ranked the 50 best pizza restaurants in Europe, but outside of Italy, and crowned as the best one of them ‘50 Kalò‘ in Trafalgar Square owned by Neapolitan, and third generation master pizza maker, Ciro Salvo. In the second and third places, there are Gennaro Nasti – of ‘Bijou’ in Paris – and Christian Puglisi – of ‘Baest’ in Copenhagen.
The titles have been awarded by ‘50 Top Pizza‘ an organization founded by Barbara Guerra, Albert Sapere, and Luciano Pignataro that evaluates and lists pizza restaurants all around the world in various categories: 50 Top Europe, Italy, North America, Africa, Japan, and Oceania. The 50 Top Pizza’s inspectors pay anonymous visits to pizza restaurants in their assigned area and express their votes judging the quality of the pizza, of service, of the ambiance, waiting times, and beverages offered.
“Opened less than a year ago – commented Sapere – the London version of ’50 Kalo’ in Trafalgar Square, inaugurated last July 12th, has already established itself on the international scene as a benchmark of the Neapolitan pizza style outside the Peninsula (Italy, Ed.).” Salvo has researched and developed a highly hydrated pizza dough for his Neaplolitan style pizza. Also, he sources ingredients directly from Italy and uses a slow leavening process for a pizza that is truly special.
Originally from Naples, Nasti in France has a completely different style and in ‘Bijou’ he offers gourmet pizzas, for which he devises real cooking recipes, sometimes with a French touch. On the other hand, Christian Puglisi, from Messina, in his Danish excellent pizza restaurant ‘Baest’ is the standard bearer of green chefs who, with sustainability in mind, prepare great food while banning waste and non-sustainable materials.
