Lemon: the Italian flavor of summer

Italian menus, both in restaurants and in Italian homes, are strongly linked to the seasons. They are regularly changed to incorporate the freshest and tastiest fruits and vegetables of the month, such as lemons, especially in summer.

Walking through different regions and cities in Italy, you will often see fruit stands filled with bright, big lemons. Nothing better to beat the heat.

Our tip: combine two Italian specialties, lemons and Loacker wafers, in a simple, tasty and enticing treat.

Loacker’s Lemon Pie

What you’ll need

Pie Crust:
1 ½ cup Loacker Vanilla Quadratini
2 tbs- light brown sugar
2 tbs- granulated sugar
6 tbs- unsalted butter melted
6-Graham crackers
Pie Tin

Pie Filling:
14 oz- Sweetened Condensed Milk
½ Cup- Lemon Juice
3-Large Egg Yolks

Directions:

Crust:
Add graham crackers and Vanilla Quadratini to a food processor and pulse into a fine crumb. You can also put in a large bag and use a rolling pin to crush them.
Add them to a large bowl.
Add the sugars, the melted butter and use a fork to mix everything together until evenly combined.
Pour the crumb mixture into your pan. Use a cup to press the crumbs into the bottom and sides of the pan,
change evenly and press the crumbs firmly with the cup.

Filling:

Heat oven to 325, beat egg yolks in medium bowl. Add sweetened condensed milk and lemon juice until well mixed.
Pour into crust. Freeze for two hours.
Add whipped cream, spread and add Loacker Vanilla Quadratini on top.
