The initiative, aimed at selected restaurants and Cash & Carry operators, aims to promote the culture of radicchio protected by the Consortium, presenting its history, production method, nutritional qualities and uses in cooking. Adding further value to the event will be the participation of Gianluca Casini, President of the Italian Association of Chefs in Germany, who will guide the audience on a culinary journey to discover the many applications of radicchio in Italian and international gastronomy.
The day will open with greetings from the Director of the Consortium Denis Susanna, followed by an in-depth presentation dedicated to the peculiarities of Radicchio di Treviso PGI. The topics will include the link with the territory, the importance of resurgence waters in production, and the infinite gastronomic possibilities offered by this vegetable, both fresh and processed. A special moment will be dedicated to a guided tasting, during which the chefs present will propose unique pairings between radicchio and the flavours of German cuisine, demonstrating the versatility of this iconic ingredient.
The day will end with an extraordinary event: the GALA ITALIA concert, scheduled at 7 p.m. in the splendid Hercules Hall (Residenz). MasterClass guests will be able to attend this gala evening, combining Italian culture and flavours in an unforgettable experience.
